Hunapu is back again for a fifth year at True North. This year's crop has notes of chocolate, raspberry, and tropical fruit. Hunapu makes excellent hot or cold coffee, brewed either as pour over, cold brew, or Japanese iced coffee.

This Antigua Hunapu comes from the Bella Vista processing mill, owned and operated by Luis Pedro Zelaya, a fourth generation coffee farmer, and his family. 

This crop is made of pickings from many small producers on the side of Agua de Volcan, the volcano at the edge of Antigua. Bella Vista supports these smaller producers working in the rich volcanic soil who would otherwise be unable to sell their coffee by processing and bringing their coffees to market. The rich soil and high elevation provide the perfect growing conditions for sweet, complex coffee harvests. Coffee produced in the Antigua region has a protected designation of origin (PDO) because of Antigua’s renowned coffee reputation. 

With over 100 years of family knowledge and a formal education in agronomy, Luis Pedro has the unique ability to bring tradition and innovation together. For example, at the coffee mill it is easy to see traditional fermentation processes being implemented, while at the same time, cutting edge drying techniques practiced in a recently constructed solar dryer with three tiers of drying beds and sensors to precisely manage temperature.
